The commitment of the Cahors Quality Charter.
To undertake to produce less than 40hl/ha from the best vineyard and a maximum of de 1.5 kg per vine stock
To undertake to do a clear traceability of each batch of wine with a meticulous registry for the vineyard and for the cellar
Control of the plot of vineyard: a consultant of the Cahors AOC promotion trade union visits the vineyard to validate the commitment of the wine maker. The vineyard and the culture of the vine must be irreproachable
Yield control: a consultant follows all the domains and makes an estimation of the yield before the harvest.
Analyses follow: each batch is analysed (after the harvest and at the end of the winemaking) by an approved "COFRAC" laboratory.
Control of the wines: all the wine transfers are registered on a meticulous registry: from the aging to the bottling.
AOC taste agreement: the batch of the Cahors Quality Charter is tasted on the same day as the rest of the AOC Cahors production but separately.
Cahors quality charter taste agreement: approximately 18 months after the harvest (the test of the millésime 2002 was in March 2004)
All the wines of the Cahors Quality Charter are regularly tasted by the wine makers and the expert jury which the members have had a specific training. The list of this jury is registered at the DGGCRF of the region (national consumer control office). Only this jury can approve of the quality of the Cahors Quality Charter and attribute the mark Cahors Excellence.
Finally the wine maker is given a certificate to testify, that this batch of wine is approved for this specific millésime and for a specific volume.
This is the birth certificate of a Cahors Excellence!
